What is Nixtamalization?
Nixtamalization is the process of cooking corn in limewater. The high alkalinity of limewater has several benefits. First it allows the corn to release its trapped micronutrients, making it far healthier to consume. Second, the limewater breaks-up mycotoxins in the corn, making it safer to eat. But the reason ancient civilizations began to practice Nixtamization nearly 5000 years ago, is because they found that corn cooked in limewater was able to form into a workable dough. This allowed them to make tortillas and a whole range of other foods.

How long can I store the tortillas for?Fresh tortillas keep well in the pantry for 2 days, or in the fridge for up to 5 days. Store your tortillas in air-tight containers or plastic wrap to keep out moisture and other contaminants. You can also freeze tortillas for up to 6 months. If you wish to freeze them, put them in a freezer bag or vacuum-seal bag to prevent freezer burn.
How do I warm up tortillas?Fresh corn tortillas naturally stiffen-up a bit when cool. This does not mean that they've staled. You simply need to warm them up before you eat them: Heat a pan on the stove to medium. Spread the tortillas over the pan evenly. Sprinkle them with a few drops of water, and cover with a lid. Heat for 15 seconds on each side and they'll be soft and ready to eat!
